Extra Virgin Olive Oil

The extra virgin olive oil is produced according to the same philosophy of the farm.
Absolutely no chemical products are used, and human intervention on the plants and on the land is reduced to a minimum. 

While showing annual variation, ours is a typically Maremman oil: it is marked by powerful herbaceous notes, fruity flavor and evident hotness.
The extra virgin olive oil is bottled without filtering.
The productions are not very high, but the resulting oil is of excellent quality.

Our olive grove

Cultivar / Varieties: Moraiolo, Leccino, Leccio del Corno and Pendolino.
Type of pruning: Policonical vase shape.
Levels of production: Approximately 10 q/ha, variable production depending on the year.
Types of soil: Sub-soil thin layer of mixed types above travertine.
Altitude: about 350 metres above sea level.

Density of plants per ha:
The olive grove is about 2.0 hectares in extent.  There is no regular pattern of planting as it is an old olive grove with dry stone walls and terracing which is undergoing renovation.  There are perhaps 150 trees.

Work in the olive grove:
Manual removal of suckers with secateurs and saw.
Care and cutting back of the naturally occurring vegetation in May and September / October.  Manual harvesting using rakes in October according to the level of maturity.
No treatments of any sort.
Between January and March pruning (every two years).

Pressing:
The olives are pressed within 48 hours of harvesting at the organic press SS. Annunziata in San Vincenzo (LI).
